There's mithril to be had in Highperch, and tin and iron in abundance. Gold and silver veins pop up fairly frequently too. In Shimmering Flats, on the other hand, there are a few sparse nodes scattered along the outer rim and a couple in the central crater. I've seen a mithril node in the silithid complex at the south of Shimmering flats too. Not many of the skinnable mobs skin out to heavy leather, but the rest are perfect fodder for levelling skinning.

Known entry coords for paths that lead up to the bridges there could be more; add in the comments if you find one Ramp at 31, 37 marked by a totem. But I am pretty sure none of those connect to Freewind Post.
At 43, 55 there is a ramp that will take you up to Freewind Post. At 47, 53 there is an elevator up to Freewind Post. The griffin master is located in the east corner of the Trade District. When the flight map appears, select Menethil Harbor as your destination. If you do not have the Menethil Harbor point on your flight map, you must take the tram located in the Dwarven District of Stormwind City to Ironforge and travel to Menethil Harbor on foot.
Menethil Harbor is on the small island off the west coast of the Wetlands.
